Ahi Tuna Nicoise Salad

Ingredients:
Romaine, chopped.
Hard-boiled eggs.
Cherry tomatoes, diced.
Green beans, steamed and shocked. (placed in ice water to stop cooking)
Kalamata Olives.
Roasted Baby Potatoes:
- toss in Olive Oil, any herbs of your choice (I used thyme, rosemary and parsley), chopped garlic, red chili flakes, sea salt and pepper
- bake at 375 degrees
- 35-40 minutes
Ahi Tuna Steaks:
- clean and dry
- mix paprika, onion powder, garlic powder, dash cayenne, drizzle of olive oil
- pat steaks with seasoning
- pan sear 4-5 minutes each side
- slice and top with capers
Dressing:
- 1/4c Olive Oil
- 1/2c Red Wine Vinegar
- sea salt and pepper
- 1 tbsp honey
- 1/2 tbsp dijon
- squeeze half lemon
Toss and enjoy!
